Winner of Iron Chef Thailand; Pastry Edition, Chef Jason Licker will share his techniques to create an entremet, by preparing a marbled mousse cake resembling a lotus flour. Not only is this cake striking, but the sweet white chocolate and tannic matcha compliment each other perfectly together.
